Pinterest – Love that place. Let me say right off, if I’m not following your boards, holler at me. The more people you follow there, the more you’ll see and learn about.
Instead of just “pinning” and never actually doing, I’ve been working putting my Pinterest account to work.
Chicken Fried Rice: Better than Take Out
(I’ll wait a moment while you check it out)
Here is what I came up with:
I adapted the recipe a bit. I’ve never had peas and carrots in my Chicken Fried Rice which their recipe called for, so I omitted them all together.
There are just two of us now, but the Mr. doesn’t work near any places to pick up lunch, so he will take the left overs and prefers to do so over freezer foods.
My Version:
2 cups of cooked rice – cooled.
3 cups of grilled/cooked chicken (what can I say, we love extra meat)
1 medium onion chopped
3 tablespoons Soy sauce – ok – probably 4 since there was more meat.
2 eggs
Salt & Pepper to taste
1 tablespoon vegetable oil
Beat the eggs and pour in large skillet and cook for a few minutes, flat until it’s done. Remove from skillet and cut into shreds/small pieces.
Heat oil in same skillet, add onions and saute. Then add the rice, soy sauce, salt/pepper and 2 cups of the chicken. Stir fry together for a few minutes and then stir in egg. Serve hot.
**Side Note: I also use some of the grilled chicken and marinated it in bottled Teriyaki Sauce, then heated it up in the skillet that I used to cook the chicken fried rice. That is what you see on the side. I told you, we are meat lovers.
This is super easy and you can easily adapt it for a huge crowd.
